CIPOLLATA
INGREDIENTS
(for 4 persons)

 

  • 4 eggs;
  • 3 white onions;
  • parsley;
  • basil;
  • rosemary;
  • lard;
  • extra-virgin olive oil;
  • salt.

 

SUGGESTED WINE:
  • Trebbiano d'Abruzzo

 

 
 

PREPARATION

    • Peel the onions and slice them thinly; in a tureen, beat the eggs with a little of salt.

       

    • You pour in a frying pan, a little bit of oil, a little bit of lard and a mince of parsley basil and rosemary.

     

    • Let flavour for two minutes, mix with a wooden spoon, then you add half glass of water, you lets the water gets warm and then you add the sliced onions and salt. Cover the frying pan. You lets cooking at moderate fire for few minutes, so the onions can remain soft.
