PANE COTTO
(Cooked Bread)

This is a poor man's dish.

  • In a pot put water, garlic, and parsley and bring to a boil.
  • When the water boils add hard bread (even if several weeks old), continue to boil until the water is almost evaporated.
  • Add salt, drizzle with olive oil, and (if in season) add fresh tomatoes.

 

VARIANT: someone even suggested the use of moldy bread: no one would have noticed. The green mold would have been confused for parsley, but then penicillin, in case of infection, is the recommended medication.
