INGREDIENTS
(for 4 persons)
  • 800 grams of lean pork meat;
  • 3 garlic cloves;
  • 2 bay leaves;
  • 1 red peperoncino;
  • extra virgin olive oil;
  • salt.
 
SUGGESTED WINE:


 

  • Montepulciano d'Abruzzo
  • Controguerra Cabernet

PREPARATION

    • Cut the pork meat in small cubes.

     

    • Put oil in a pan, preferably a clay pot, and braise the meat with the chopped peperoncino. Cover, and when the meat juices are almost completed evaporated, add the bay leaves, the garlic (not pealed), salt, cover again and finish cooking at moderate heat.

     

    • During the cooking, stir often with a wooden spoon and serve hot.
