CHEESE AND EGGS LAMB
INGREDIENTS
(for 4 persons)
- 1 or 2 kg of lamb meat;
- 80 grams of bacon;
- 40 grams of grated pecorino cheese;
- 3 eggs;
- 2 garlic cloves;
- a rosemary sprig;
- a spoonful of wheaten flour;
- half glass of dry white wine;
- extra virgin olive oil;
- salt;
- pepper.

After have cut in pieces the lamb, wash it, dry it and put it to brown in a frying pan in which you will have heated some oil and browned the cut bacon in pieces and a chop of the peeled garlic cloves and the rosemary.

When the meat is quite browned, salt and wet
with the wine white. Then make cook to slow fire for about an hour,
adding a little water if it tended excessively to dry and mixing
from time to time with a wooden pallet.

Passed the foreseen time, in a bowl beat the eggs,
join the spoonful of flour, the grated pecorino cheese, salt and pepper.
