IL FIADONE
 
(EASTER SWEET WITH A CHEESE FILLING)
INGREDIENTS
 
FOR THE FILLING:
 
  • 1 kilogram of cheese (cow cheese, rigatino or parmesan);
  • 10 eggs;
  • 1 lemon peel, grated.
 
FOR THE DOUGH:
 
  • 1 kilogram of flour;
  • 4 eggs;
  • 1 glass of oil;
  • 300 grams of sugar;
  • 1 envelope of yeast.

PREPARATION

    • Mix the ingredients for the filling;
    • Prepare the dough, which must be rather soft;
    • Roll the dough with a rolling pin to obtain a layer;
    • Divide the dough layer into two parts;
    • Prepare the baking pan;
    • Place one dough layer in the baking pan and allow the dough to overlap the rim of the baking pan;
    • Pour the filling in the pan;
    • Make round holes on the other dough layer (a thimble can be used );
    • Cover the filling with this layer;
    • Fold the overlapping dough toward the inside of the pan;
    • Bake in the oven for one hour.
