LAMB SHEPHERD STYLE
INGREDIENTS
(for 4 persons)

First cut the lamb meat in pieces, wash it, and
put in a pan with a little oil. Add the chopped onion, a few sage leaves,
peperoncino and salt to taste, cover and cook at moderate fire.

After twenty minutes, add the wine, raise the heat to evaporate
the wine, then cover and continue to cook at moderate fire until meat
is tender, that is to say when you can easily put a fork through it. If
in the cooking the mixture is too dry, add a little warm water and lower
the heat. If the mixture is too watery, raise the heat. Cook until the
meat is tender but still firm.

When the cooking is finished, toast the bread slices, place them in a serving platter, pour the meat on top and serve.
