FETTUCCINE ALL'ABRUZZESE
 
INGREDIENTS
(For 4 persons)
  • 400 grams of fettuccine;
  • 80 grams of bacon;
  • 60 grams of grated pecorino cheese;
  • 1 little onion;
  • parsley;
  • basil;
  • salt;
  • extra virgin olive oil;
  • pepper.

PREPARATION

    • Peel and mince the onion; mince also the bacon. Pour the oil in a frying pan and brown the onion and the bacon, mixing with a wooden pallet. Then add the minced parsley and the minced basil, salt, pepper and cook to much moderate fire, moistening from time to time with some hot water. The sauce will have to be quite dry.
    • Put a pot on the fire with plenty of water, bring it to boil, salt it, put the pasta in the water and cook it. Drain the pasta, dress it with the grated cheese and then with the sauce prepared previously, mix well and served.
